1st - then wait till the opportunity for something better and closer and work as a chef, i reccommend that while you are being a brickky that you keep learning about cooking/chef so when the time comes you will have a gg opportunity.

You're talking to some one who did bricklaying for 5 years, I helped build apartments down in Mandurah for a whole year and even got some specialty jobs up at the mines, any bricky who has back problems isn't doing it right, most likely some one who didn't do a pre-apprenticeship and just jumped straight into the job with no qualifications or bluecard on a shit wage getting taken advantage of working their asses off like a nigga doing slave labor.
